Château Pichon Baron Pauillac (Grand Cru Classé) is a classic Bordeaux blend of Cabernet Sauvignon and Merlot. This wine is produced from the best grapes grown on the estate of this historic property which was classified as a 2nd Growth in the 1855 Classification of the Medoc. The vines produce low yields which are then optically sorted to ensure that only the most uniform and ripest fruit enters the Grand Vin. Fermentation occurs in a mixture of vessels before long aging in a high proportion of new French oak barrels. The result is an exquisite, complex, and opulent wine, with aromas of ripe blackcurrant fruit, tobacco, cedar, and graphite. On the palate, the wine is full-bodied with a high level of firm tannins cut by refreshing acidity. The finish is long and evolving and full of sweet oak spice notes. This wine is the very definition of Pauillac and the wines of the Medoc.
